Coach Dez's Thai Laab
Thai Laab is a Thai meat salad, I like to eat it in a lettuce wrap, sometimes along with some sticky rice. Use what you have for this as far as ground meat. This is by no means the traditional way to do this but it’s easier and more macro friendly, for me.
Here’s the link to a more traditional Laab: https://hot-thai-kitchen.com/laab-moo/
For the ingredients in my “Laab-like” dish:
1-lb. Lean ground red meat
Half a small shallot
1 clove of minced garlic
Pepper flakes to taste
2 tablespoons fish sauce
Juice of 1 lime
Handful of each of the following:
Radish
Diced cucumber
Mint
Cilantro
Green onion
Romain lettuce for wraps
Get a pan hot on medium to medium high heat. Cook ground meat, shallots, radish, and garlic. When meat is cooked and shallots and radish are translucent turn off heat and add in the rest of the ingredients. Taste test and make sure spice is to your liking. Serve in a bowl with lettuce leaves on the side, no utensils needed, scoop bites of Laab with lettuce into your mouth and enjoy!
